How mercury gets into fish in the first place
Mercury enters water from both natural sources and industrial pollution. Bacteria in the water convert it into methylmercury, which is the form that matters biologically, because it binds to protein in muscle tissue and is not easily shed.
That last part is what drives everything else. A fish absorbs methylmercury faster than it can excrete it, so the concentration in its body only goes up over its lifetime. This is called bioaccumulation.

How much is too much? An honest attempt at the math
Here is the part most pages skip. There is no published veterinary reference dose for methylmercury in dogs. No regulator has set one, and there is no well-established canine equivalent of the human limit. Any page that gives you a confident milligrams-per-kilogram safety figure for dogs is making it up or borrowing a human one without saying so.
So this table borrows a human one, and says so. The EPA's reference dose for methylmercury is 0.1 micrograms per kilogram of body weight per day, last revised in 2001. It is the estimated daily exposure a person can sustain over a lifetime without expected harm, and it was set to protect fetal brain development, which makes it deliberately conservative.
Applying it to dog body weights is a comparison, not a safety threshold. Dogs are not small humans, their lifespans are shorter, and the endpoint the RfD protects is not the same. Treat these as a way to see the relative scale between species, which is the genuinely useful part, and not as a limit your dog must stay under.

What that table actually tells you
A standard 5 oz can of tuna holds roughly 142 g drained. So for a 25 lb dog, the light-tuna figure works out to under half a can per week, or about one can every two weeks. For the same dog, albacore lands near a sixth of a can per week.
Meanwhile the sardine figure for that dog is over 600 g per week, which is more sardines than any sensible person would feed anyway. The calorie limit arrives long before the mercury limit does. That is the real conclusion here: for low-mercury species, mercury is not the binding constraint on how much you feed, and you can stop thinking about it. None of this describes a dog who ate something once. These are weekly rates sustained over a long period. Fish oil supplements, which are the part people forget
Fish oil is one of the most commonly given supplements in dogs, usually for skin, coat, joints or kidney support, and it is often given daily for years. There is a mitigating detail. Methylmercury binds to protein in muscle tissue rather than accumulating in fat, so an oil pressed and refined from fish generally carries far less than the flesh it came from. A well-refined oil is not the same exposure as eating the fish.
What that means practically is that the product matters. The species used, whether the oil is molecularly distilled, and whether the manufacturer tests for heavy metals all change the answer, and none of that is visible from the front of the bottle.
